A cleaner crop than 2022 meant that harvest dates were not restricted by disease pressure. Very beautiful ripening and a balanced crop brought wonderful balance and flavour.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eIn the cellar \u003c\/em\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe release of this wine marks somewhat of a celebration — the first bottling of a much more confident step into the style that we have been edging towards for some years.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWe like to pick a little earlier at Dash Farms, where we find the balance of flavour, freshness, and tannin to arrive just before high sugars. A sincere crush of whole bunch fruit underfoot, followed by a slow and gentle press. Overnight rest and débourbage prior to fermentation in tank at fairly cool temperatures. We enjoy the healthy and elongated fermentation arc we see in tank, being careful to top and seal once the ferment has sufficiently slowed.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eFull dryness is typically achieved by early winter. Malo can be slow in tank; the ’23 was gently stirred and moved to barrel in mid-November while still completing secondary fermentation.
